In Hong Kong, dim sum is a morning tradition with some restaurants opening as early as 6 AM in the morning, and folks leisurely reading their newspapers, socializing, and nibbling for hours on end. Chinese immigrants, many from the Canton region brought this custom to the Australia in the 1900s. We concentrate on the well known Chinese Cantonese style of dim sum. Other forms of dim sum include Mandarin Chinese style dim sum from Northern China.
