Pilot. Restaurant + Bar is a unique little restaurant in Canberra’s north that has an ever growing focus on local produce, Australian wines and spirits, and local Canberra artists and ceramicists. It is a collaboration between Dash Rumble (Momofuku Seiobo), Ross McQuinn (eightysix) and Malcolm Hanslow (Ester), and aims to use seasonal ingredients to showcase complex flavours and exciting dishes. It is a restaurant for a special occasion or a quick glass of wine. The menu and drinks list is forever changing with many non alcoholic options. Along with an a la carte shared menu, a prix fixe menu is also offered. This includes all of Pilot.’s favourite dishes plus an optional beverage pairing of both alcoholic and nonalcoholic.
